Was a four year letterwinner in crew at Saint Edward's High School. He was captain of his crew team both junior and senior year. Kappel also lettered in cross country his freshman and junior year. He had a stellar senior year with his team winning multiple races such as the Tampa City Regatta, the Head of the South, and also winning the Florida State Championship. Senior year, he was a Wendy's Heisman State Finalist, and also on the U.S. Rowing Scholastic Honor Roll. Outside of athletics he was a member of the Sons/Daughters of the American Revolution, he participated in the Florida State Chinese competition, and attended the Beijing Language and Culture University. At Dartmouth, he plans to study Bio-engineering in hopes to pursue a career in business and engineering.

Hunter is the son of James and Debra Kappel and has one brother and sister. His cousin, Joel Montgomery attended Dartmouth.
